Why Your Home Oven Struggles with Pizza

A professional wood-fired pizza oven reaches temperatures of 430–480°C. Your home oven maxes out at around 250–280°C. That temperature gap is why homemade pizza often comes out with a pale, soft, slightly soggy base instead of the crackly, charred bottom you'd get in a pizzeria.

A pizza stone (or its more conductive cousin, a baking steel) is designed to bridge that gap. By absorbing and storing intense heat, it delivers a powerful burst of bottom heat the moment the pizza makes contact — mimicking the effect of a professional oven floor.

For most home cooks, a good cordierite pizza stone is the ideal starting point. If you bake frequently and want maximum performance, a baking steel is worth the investment.

How to Use a Pizza Stone: Step by Step

Step 1 — Position It Correctly

Place the stone on a rack in the upper-middle position of your oven. This puts it closer to the top heating element, which helps the top of the pizza cook faster — more closely replicating the radiant heat of a real pizza oven. If your oven has a grill/broiler function, you can use this in the last minute of cooking for extra top color.

Step 2 — Preheat for at Least 45 Minutes

This is the step most people skip — and it's the most important. Turn your oven to its absolute maximum temperature and let the stone sit inside for a minimum of 45 minutes. The stone needs time to fully saturate with heat all the way through. A stone that's only had 15 minutes won't deliver the same result.

Step 3 — Use a Pizza Peel

To safely launch your pizza onto the hot stone, you need a pizza peel — either wooden or metal. Dust it generously with semolina flour or fine polenta (which acts like tiny ball bearings) and assemble your pizza directly on the peel. Work quickly once the toppings are on, as the dough will start to absorb moisture from the sauce.

To check the pizza slides freely before launching, give the peel a gentle shake. If it sticks, lift the edges carefully and add more semolina underneath.

Step 4 — Launch and Bake

Open the oven, angle the peel over the stone, and use a sharp forward-then-back motion to slide the pizza off. Bake for 6–9 minutes depending on your oven's maximum temperature, watching for the crust to puff and develop color.

Step 5 — Remove Carefully

Slide the peel back under the pizza to retrieve it. Let the stone cool inside the oven — never move a hot stone or place it on a cold surface, as thermal shock can cause cracking.

Caring for Your Pizza Stone

  • Never soap it. The stone is porous and will absorb detergent. Rinse with plain hot water only.
  • Don't oil it. Unlike cast iron, seasoning a stone isn't necessary or beneficial.
  • Scrape off debris once cool using a metal scraper or stiff brush.
  • Stains are normal. A dark, well-used stone bakes just as well as a pristine one — arguably better.

With a good stone and proper technique, the gap between your home pizza and a restaurant pizza closes dramatically. It's one of those tools that pays for itself in the very first bake.
